It is now considered one of the most famous dishes of China. Traditionally, Peking Duck is carved in front of the diners by the Chef.

 

The dish is prized for the thin and crispy skin, having being roasted in a closed hung oven then served with Bellini, Cucumber, Scallion and Hoi Sin Sauce, the duck meat will be prepared as duck lettuce wraps.
